Summer Salsa
Nothing's greater in the summer then the taste
of fresh vegetables. Summer Salsa combines some of our favorite summer
vegetables into a taste explosion of summer flavor. We like this salsa
served up fresh an hour after it was mixed and also canned to bring the
memory of summer past into the snowy months. The recipe below will make
2 3/4 cups of salsa. If you are planning to can the salsa you will want
to increase the amount of each ingredient added. It should be canned following
the same procedure that you use to can whole tomatoes.
ingredients:
2 cups finely chopped fresh tomatoes
1/4 cup finely chopped fresh onions
1/4 cup finely chopped bell peppers
1 tablespoon finely chopped jalapeno pepper (this is optional, if you
want mild salsa leave the jalapeno out entirely)
1 tablespoon olive oil
1 tablespoon vinegar
1 teaspoon oregano (fresh if you have it, but dried works just as well)
1 teaspoon garlic powder
1/2 teaspoon cumin powder
directions:
This is an easy one, all you need to do is
combine all of the ingredients in a medium sized mixing bowl. Then cover
the mixing bowl and place it in your refrigerator for one hour to allow
the flavors to blend. Summer Salsa will keep in your refrigerator for several
days but we doubt your family will leave it uneaten for that long.
